In addition to Andreys recommendation (They both are excellent books) I would say:

RCP uses heavily both SWT and JFace. If you are not familiar to them, the book "The definitive guide to SWT and JFace" by Rob Warner and Robert Harris is also an excellent book (and is a need).

I would add that I have completed a standalone RCP application that can
provide code examples for items like help, toolbar, menubar, splash
screen, welcome, minimize to tray, jobs, preference pages, and wizards.
It is called Komo PostgreSQL Client and is available for download,
including the source code, from pgfoundry.org. Hope this is helpful!
