I'm using eclipse 4.5.2 + pydev + egit.

When I'm in my editor and start typing out a keyword like logging, it brings up the code completion dialog but the coloring/hilighting is hard to read. I've dug all over the place and I can't find where I can change this specific item. I've change many of them to suit my needs but this one I can't seem to change.

Not sure I have the best answer. Much can depend on the OS and windowing
your running. Also, have you looked through Eclipse Marketplace and
tried out http://eclipsecolorthemes.org/ ?
