I am not able to see all of the memory rendering context menu items that the
documentation says are available. In particular, I don't see how change the
endianness or radix. When I right-click in the rendering window, my menu
items are

Add Rendering
Remove Rendering
---
Reset to Base Address
Go to Address...
---
Format...
---
Resize to fit
Hide address column
---
Copy to Clipboard
Print
---
Properties

It seems like the concepts I want might be under "Format..." but they're
not. Is this the wrong menu completely? Is the doc just obsolete?

It's been more than 10 years for this question. But I am facing the same issue in Eclipse C/C++ Development Tools Version: 9.7.0.201903092251

See attached screenshot. Please help if anyone knows a workaround.
