For example, Tomcat: With "File->New->Other->Java->Tomcat Project" you can
generate a Tomcat project. Is there also such a thing for GEF or how does
I generate a GEF project?

I have perused the GEF Developer Guide and the FAQ's, however, I could not
find out what project I should use for it. I hope that somebody can help
me! I am grateful for every help.

To start the simplified shapes-diagram example:
New->Example->Gef->Shapes-Diagram

Writing your own gef-editor you may start changing the the
shapes-diagram-plug-in to get some expi.
