I want to start a new project. I have been advised to right click on the name of my project, then select new and class to create a class called HelloWorld.java. Now I am in a window called "New Java Class" and I don't know what to do next.

I would suggest you go through the provided Help documentation (Help->Help Contents menu item). The Java Development Users Guide has a Basic Tutorial in the Getting Started section that includes a page on creating a new Java class.
