Open a console window running bash. Move the tarball to the subdirectory
under which you want the Eclipse installation to appear, then issue this
command:

$ tar -zxf eclipse-SDK-4.2.1-macosx-cocoa-x86_64.tar.gz

I'm not a Macintosh user, so I don't know what possible surprise crashes
the Finder these days. You're better off at the command line for this
command anyway (says the long-time, die-hard, snarky Unix and Linux user).

Sorry, I hope this helps nevertheless.

Best of luck.
