Where does jetty write it's logs?

It they have to be turned on how do you do that?

Is there a document that shows this?

The Jetty HttpService currently wraps Jetty 5.1 which uses Apache commons
logging. For most situations you can use JUL (assuming Java 1.4 or higher)
or Apache Commons Logging SimpleLog otherwise. The toplevel logger is named
org..mortbay.jetty. For more specific loggers you might take a look at the
Jetty FAQs.
