and if so how do I do this?
I suppose the question is, can I connect to the Trac Wiki (using the XML-RPC
interface) and edit pages in place from Eclipse, or extract the pages into
an Eclipse project, update them using WikiText and then put them back?

Mylyn does not support editing Trac wiki pages but I believe there are other
plug-ins available that provide that functionality. Check on the Eclipse
Marketplace.
We did experimented with that as part of a Summer of Code project a while
back and the code is still in the sandbox in CVS but I can't say for sure if
it still works and there is no update site for installing it.
