How can I tell Eclipse to AUTOMATICALLY validate all XML files of a project whenever I edit and save an XML / XSD schema file?

Hrm, the XML validator should run on save.

Can you please report back with what Eclipse Platform and WTP versions you are running?

You can right click on the project and select 'Properties' -> 'Validation'. Check the checkbox of 'Add Validation Builder to project' to enable the validation when the file is saved. Hope that helps.
