Is there a reference to what options can be controlled with a css style
sheet for each SWT widget and what the correct syntax is?

We have a wiki page which has a listing of some of those options.

You can also refer to our test suite for examples as that's where we test
our CSS code. It's located under the /cvsroot/eclipse repository.
e4/org.eclipse.e4.ui/tests/org.eclipse.e4.ui.tests.css.swt
