There is an open feature request that has been partially completed:

176964: Provide Trac custom fields in Task Query form
https://bugs.eclipse.org/bugs/show_bug.cgi?id=176964

We are still lacking good ideas how to integrate that with the current user
interface for creating Trac queries. Please add your requirements on the
bug report and any suggestions you may have.
