Is there a preferred way to use CDT to save / copy entire project to new workspace ?

If the project is external to an Eclipse workspace (mine usually are)
then just import them into the new workspace using File-->Import

For those projects actually in a workspace,
use File-->Export (usually as an archive) from old workspace
then File-->Import into new workspace.
