I installed Eclipse Oxygen since my computer had to be reset (Windows 10) and I lost Mars. I had Mars previously and never had an issue with it. It seemed to be an 'all-in-one' install.

1. Can I easily uninstall Oxygen and reinstall Mars or something more stable?

It's hard to imagine Mars as something more stable. But yes, you can delete the installation folder and create new ones. You can use the installers from https://wiki.eclipse.org/Eclipse_Installer to install any version of Eclipse and on this page you'll find links to older downloads: https://www.eclipse.org/downloads/eclipse-packages/
