The official GEF documentation is provided in our wiki at https://github.com/eclipse/gef/wiki. I would recommend to head there for a first overview (which components exist, which scope they have, etc.).
A step by step tutorial (a simple mind-map editor) is provided for free by itemis at https://info.itemis.com/en/gef/tutorials/. It is a good starting point to get into the main parts of the framework.
In addition, a couple of examples/snippets for each GEF component can be found in our Git repository at https://www.eclipse.org/gef/. There are also two bundled examples, which demonstrate the capabilities of the two main framework stacks, namely the MVC logo and Zest Graph example. Studying the example code may help you to get into details. We have paid attention to have proper javadoc documentation throughout our code base, so that should help as well.

parts III and IV of the tutorial are finished, too, but they still need to be published, which is planned for the near future (I already asked a colleague to do so). Thank you for waiting so patiently, folks.
