In your project folder there should be a subfolder called loggers. Open that in the project explorer and see if your logger is there. If it is, and if it is not already in your scenario, just drag it back into the scenario. I don't know what on earth I did, but somehow I've eliminated the CSV logger from my setup. I've tried going to "Window...Other...." to open it, to no avail. The only option when I search for "logger" is Active Loggers. I can open "Active loggers" but that doesn't seem to help at all. All assistance is greatly appreciated. Thanks,

The new cases in stem are labeled "Incidence". Please see this video: https://www.youtube.com/watch?v=iw-M0SkIK50

see the section: Getting Started With the Visual Model Editor
When you build your model you need to select the appropriate transition and then click the "Incidence" check box. Then it will be available for you to select in the logger of your choice.

I was wondering if there is a way to log or view new cases due to 'scenario x'.
I have run a few scenarios and added CSV loggers that log value such as infections, deaths etc. However, I have realised that the values given are active cases at 'x date'. Is there a way to log or view the new infections on their own? I would really appreciate this as I'm testing some triggers but wish to see the daily influence on the spread.
