This is driving me nuts! And I need this functionality since it's
something I use all the time...

How do I toggle quickly between two editors??? I thought ctrl-option-E but
that only brings up a list of some editors? I want to quickly toggle
between the current editor and the previous (similar to alt-tab on windows
(option-tab on mac) between open apps.

What am I missing? I've googled and been looking over all the shortcuts.

Command+E should let you list the editors and quickly jump to one.

Command+Shift+L will show all the active keybindings.

Shift+Command+F6 will go to the previous editor.

And you can go into Window > Preferences > Keys and remap
SHIFT-COMMAND-F6 / COMMAND-F6 to SHIFT-COMMAND-TAB / COMMAND-TAB. I do
that because of Firefox's tab-switch default keybinding (on
Windows/Linux, anyway). Added bonus is you can switch tabs w/ one hand
that way. :)
