i try to build a small IDE for my customer (functional department in our enterprise) i thought starting with one of the packages, that can be downloaded, and slim it down to the bare minimum.

Is there a git/repository that contains repeatable instruction (maven/ant/....) to build these packages?

The Eclipse platform and (all?) the Eclipse packages are built with maven and its dedicated plugin for Eclipse plugins (Tycho). You can find more about the common build infrastructure (CBI) of the platform here if you want to build your own Eclipse. If you want to have more information on Maven/Tycho based build, you can have a look at the Minerva project. A full guide to build the Eclipse platform is also available there. If you don't want to start by adding stuff to the platform but if you want to slim down an existing package instead, you can have a look at how the modeling package is created for example thanks to the Amalgam project.
