I would like to change the Data inside of my Table (only the GUI),
without using the DataProvider.

This I wanna do, to make the GUI responsible, but the sending the Data to the Server I would do later.

Is it possible?

Not directly, the IDataProvider is responsible for telling the NatTable which data to handle. There is no way around this. So if you need to separate GUI data from storage data, you need to change your architecture.
