So I'm looking to build my own application that uses Equinox. I want to use the P2 system to roll out an update manager for the software, but I can't seem to find any documentation about the API other than brief overviews of P2 concepts on the eclipse site and how they relate to the eclipse IDE.

I don't know if I'm just stupid or something, but I can't find anything about it in the respect of integrating it into my own Equinox application.

It's a good entrypoint and summary of P2 and contains links to the API Docs.

The latest Equinox book has text about p2 too.
