I work with other text editors outside Eclipse where CTRL+E is defined as function
"delete whole current line" (where current = where cursor is placed).
In Eclipse there is another hotkey for this function.

Can I somehow re-define the hotkey in Eclipse so that CTRL+E means here the same?

You can define key bindings in Window->Preferences->General->Keys
